Ingredients

- 1 pound of chorizo sausage
- 4 medium-sized potatoes, diced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 cups of chicken broth
- 1 cup of heavy cream
- 2 cups of kale or spinach
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Sauté chorizo in olive oil until crispy, about 5-7 minutes.
- Add onion and garlic, cooking until the onion is translucent, about 3-4 minutes.
- Add potatoes and chicken broth, bring to a boil, then simmer for 15 minutes until potatoes are tender.
- Stir in heavy cream and greens, simmer for an additional 5 minutes.
- Season with salt and pepper to taste, serve hot.
