  • 3 cups cooked rice (white or brown)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 avocado, sliced
  • Fresh cilantro, for garnish

Feel free to adjust the spice level according to your taste! If you’re not a fan of spicy food, you can reduce the amount of chipotle.

Instructions

  1. In a bowl, combine shrimp, olive oil, lime juice, chipotle, garlic powder, smoked paprika, salt, and pepper. Marinate for 10 minutes.
  2. Heat a skillet over medium-high heat and cook the marinated shrimp for 2-3 minutes on each side until pink and opaque.
