To whip up these scrumptious quesadillas, you’ll need the following ingredients:
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack works great)
- 1 cup cooked chicken, shredded (optional for a meatier option)
- 4 tablespoons chili butter (see below for the recipe)
- 1 small onion, diced
- 1 bell pepper, sliced
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Chili Butter Recipe:
To create the chili butter, simply mix:
- 1/2 cup unsalted butter, softened
- 2 tablespoons chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
Instructions
- In a mixing bowl, combine the softened butter, chili powder, garlic powder, and salt to prepare the chili butter.
- In a skillet over medium heat, melt a tablespoon of chili butter and sauté the diced onion and sliced bell pepper until tender.
- Spread chili butter on one side of each tortilla, then layer cheese, sautéed vegetables, and shredded chicken on the unbuttered side. Top with another tortilla, buttered side up.
- Cook the assembled quesadilla in the skillet over medium heat for 3-4 minutes until golden brown, then flip and cook another 3-4 minutes.
- Remove from heat, slice into wedges, and serve with salsa or guacamole.
Notes
- Add more vegetables or spices to customize your quesadilla.
- For a vegetarian option, omit the chicken.
