To whip up these scrumptious quesadillas, you’ll need the following ingredients:

  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack works great)
  • 1 cup cooked chicken, shredded (optional for a meatier option)
  • 4 tablespoons chili butter (see below for the recipe)
  • 1 small onion, diced
  • 1 bell pepper, sliced
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Chili Butter Recipe:

To create the chili butter, simply mix:

  • 1/2 cup unsalted butter, softened
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. In a mixing bowl, combine the softened butter, chili powder, garlic powder, and salt to prepare the chili butter.
  2. In a skillet over medium heat, melt a tablespoon of chili butter and sauté the diced onion and sliced bell pepper until tender.
  3. Spread chili butter on one side of each tortilla, then layer cheese, sautéed vegetables, and shredded chicken on the unbuttered side. Top with another tortilla, buttered side up.
  4. Cook the assembled quesadilla in the skillet over medium heat for 3-4 minutes until golden brown, then flip and cook another 3-4 minutes.
  5. Remove from heat, slice into wedges, and serve with salsa or guacamole.
