Ingredients

  • 2 cups cooked wild rice
  • 2 cups cooked chicken, shredded or diced
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables (peas and carrots work great)
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine wild rice, chicken, cream of chicken soup, chicken broth, mixed vegetables, garlic powder, onion powder, salt, and pepper in a bowl.
  3. Stir in half of the shredded cheddar cheese.
  4. Grease a 9×13-inch baking dish with olive oil and add the mixture.
  5. Top with remaining cheddar cheese.
  6. Bake for 30 minutes or until cheese is bubbly and golden.
