A deliciously creamy Chicken Tzatziki and Rice Bake that’s easy to prepare and bursting with flavor.

Ingredients

  • 2 cups cooked rice (white or brown)
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, for garnish (optional)

Instructions

  1. Mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and pepper to make tzatziki sauce.
  2. Cook diced chicken in a skillet over medium heat until no longer pink, about 5-7 minutes.
  3. Combine cooked rice, chicken, and half of the tzatziki sauce in a large bowl.
  4. Pour into a greased baking dish, top with remaining tzatziki sauce and mozzarella cheese.
  5. Bake at 375°F (190°C) for 25-30 minutes until cheese is bubbly and golden.

Notes

  • Feel free to garnish with fresh parsley before serving.
  • This dish can be made ahead and stored in the refrigerator before baking.
