- 2 cups cooked rice (white or brown)
- 1 pound boneless, skinless chicken breasts, diced
- 1 cup Greek yogurt
- 1 cucumber, grated and drained
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon dried dill
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- Fresh parsley, for garnish (optional)
Instructions
- Mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and pepper to make tzatziki sauce.
- Cook diced chicken in a skillet over medium heat until no longer pink, about 5-7 minutes.
- Combine cooked rice, chicken, and half of the tzatziki sauce in a large bowl.
- Pour into a greased baking dish, top with remaining tzatziki sauce and mozzarella cheese.
- Bake at 375°F (190°C) for 25-30 minutes until cheese is bubbly and golden.
Notes
- Feel free to garnish with fresh parsley before serving.
- This dish can be made ahead and stored in the refrigerator before baking.
