  • 1 package (9 ounces) cheese tortellini
  • 2 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery for about 5 minutes.
  2. Add Italian seasoning and stir for a minute.
  3. Pour in the chicken broth, bring to a boil, then reduce heat to low.
  4. Stir in shredded chicken and tortellini; cook for 5-7 minutes until tortellini is tender.
  5. Add fresh spinach and let it wilt; season with salt and pepper to taste.
