- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon Italian seasoning
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 package (9 ounces) cheese tortellini
- 2 cups fresh spinach
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery for about 5 minutes.
- Add Italian seasoning and stir for a minute.
- Pour in the chicken broth, bring to a boil, then reduce heat to low.
- Stir in shredded chicken and tortellini; cook for 5-7 minutes until tortellini is tender.
- Add fresh spinach and let it wilt; season with salt and pepper to taste.
Notes
- Parmesan cheese can be added for extra flavor when serving.
- Feel free to add other vegetables or herbs for variation.
