- 1 pound boneless, skinless chicken breasts
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1 tablespoon olive oil
- Salt and pepper, to taste

Instructions
- Sauté chopped onion and bell pepper in olive oil until translucent.
- Add chicken, season with salt and pepper, and brown on all sides.
- Mix in black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes.
- Remove chicken, shred it, and return it to the soup.
- Serve with desired toppings.
