A delicious Chicken Scampi with garlic and parmesan cheese served over rice.

Ingredients

  • 1 pound of chicken breast, cut into bite-sized pieces
  • 1 cup of uncooked rice
  • 4 cloves of garlic, minced
  • 2 cups of chicken broth
  • 1 cup of grated parmesan cheese
  • 1/4 cup of olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • Optional: chili flakes for a spicy kick

Instructions

  1. Heat olive oil in a skillet over medium heat, add chicken, season, and cook until golden brown (5-7 mins).
  2. Add minced garlic and stir for 1 minute until fragrant.
  3. Add uncooked rice, stir to coat, then pour in chicken broth and bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 20 minutes until rice is cooked.
  5. Remove from heat, stir in parmesan cheese until melted and creamy.
  6. Garnish with parsley and optional chili flakes, serve warm.

  • For a spicier dish, add chili flakes according to your taste.
