- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup sliced mushrooms
- 1 cup Riesling wine
- 1 cup chicken broth
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 1 cup heavy cream
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a skillet over medium-high heat and sear seasoned chicken for 5-7 minutes on each side until golden.
- Remove chicken, sauté onion and garlic in the same skillet for 2-3 minutes.
- Add mushrooms and cook until soft, about 5 minutes.
- Deglaze with Riesling, scraping the bottom, and simmer for 5 minutes.
- Add chicken broth, return chicken and thyme, and simmer for 15 minutes until chicken is cooked through.
- Stir in heavy cream and simmer for another 5 minutes.
Notes
- Feel free to customize with your favorite veggies or herbs.
- Serve with fresh parsley for garnish.
