  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • 1 cup chicken broth
  • 1/4 cup capers, rinsed
  • Fresh parsley, chopped for garnish

Instructions

  1. Pound chicken breasts to 1/2-inch thickness and season with salt and pepper.
  2. Dredge the chicken in flour, shaking off excess.
  3. Heat olive oil in a skillet and sauté chicken for 3-4 minutes per side until golden brown; set aside.
  4. Melt butter in the same skillet, then add lemon juice and chicken broth, scraping browned bits.
  5. Stir in capers and simmer sauce for 2-3 minutes.
  6. Return chicken to skillet, spoon sauce over, and cook for an additional 2 minutes.
  7. Garnish with fresh parsley and serve.
