- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- Salt and pepper, to taste
- 3 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1/2 cup fresh lemon juice (about 2 lemons)
- 1 cup chicken broth
- 1/4 cup capers, rinsed
- Fresh parsley, chopped for garnish
Instructions
- Pound chicken breasts to 1/2-inch thickness and season with salt and pepper.
- Dredge the chicken in flour, shaking off excess.
- Heat olive oil in a skillet and sauté chicken for 3-4 minutes per side until golden brown; set aside.
- Melt butter in the same skillet, then add lemon juice and chicken broth, scraping browned bits.
- Stir in capers and simmer sauce for 2-3 minutes.
- Return chicken to skillet, spoon sauce over, and cook for an additional 2 minutes.
- Garnish with fresh parsley and serve.
