Ingredients

  • 1 pound of boneless, skinless chicken breasts
  • 1 cup of pearl couscous
  • 4 cups of chicken broth
  • 2 cups of mixed vegetables (carrots, peas, and corn work well)
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste

Instructions

  1. Chop chicken into bite-sized pieces and season with salt and pepper.
  2. Heat olive oil in a large pot and sauté onion and garlic until translucent.
  3. Add chicken and cook until browned on all sides.
  4. Pour in chicken broth, add mixed vegetables, and bring to a boil; then reduce heat and stir in thyme.
  5. Add pearl couscous and simmer for 10-12 minutes until tender.
  6. Taste and adjust seasoning before serving.
