Ingredients

- 1 pound of boneless, skinless chicken breasts
- 1 cup of pearl couscous
- 4 cups of chicken broth
- 2 cups of mixed vegetables (carrots, peas, and corn work well)
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Instructions
- Chop chicken into bite-sized pieces and season with salt and pepper.
- Heat olive oil in a large pot and sauté onion and garlic until translucent.
- Add chicken and cook until browned on all sides.
- Pour in chicken broth, add mixed vegetables, and bring to a boil; then reduce heat and stir in thyme.
- Add pearl couscous and simmer for 10-12 minutes until tender.
- Taste and adjust seasoning before serving.

- A splash of lemon juice can enhance the flavors.
- Feel free to customize the mixed vegetables to your liking.
