To make your Chicken Fajita Pasta, gather the following ingredients:

  • 8 ounces of penne pasta
  • 1 pound of boneless, skinless chicken breasts, sliced
  • 1 tablespoon olive oil
  • 1 bell pepper (red or green), sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, for garnish

Instructions

  1. Boil salted water, add penne pasta, and cook until al dente. Drain and set aside.
  2. Heat olive oil in a skillet, add sliced chicken, seasoning with salt, pepper, chili powder, cumin, and paprika. Cook until browned, about 5-7 minutes.
  3. Add sliced bell pepper, onion, and minced garlic. Sauté for 3-4 minutes until tender.
