To make your Chicken Fajita Pasta, gather the following ingredients:
- 8 ounces of penne pasta
- 1 pound of boneless, skinless chicken breasts, sliced
- 1 tablespoon olive oil
- 1 bell pepper (red or green), sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Fresh cilantro, for garnish
Instructions
- Boil salted water, add penne pasta, and cook until al dente. Drain and set aside.
- Heat olive oil in a skillet, add sliced chicken, seasoning with salt, pepper, chili powder, cumin, and paprika. Cook until browned, about 5-7 minutes.
- Add sliced bell pepper, onion, and minced garlic. Sauté for 3-4 minutes until tender.
- Pour in chicken broth and simmer, then add heavy cream and cook for 3-5 minutes until slightly thickened.
- Stir in cooked pasta and cheese until melted. Garnish with cilantro and serve.
