- 2 cups cooked chicken, shredded
- 4 cups tortilla chips
- 2 cups red enchilada sauce
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 cup sour cream
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine chicken, onions, tomatoes, garlic powder, cumin, salt, and pepper.
- In a baking dish, layer half of the tortilla chips, chicken mixture, enchilada sauce, and cheese. Repeat the layers.
- Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes.
- Let it cool, then top with sour cream and cilantro before serving.
