To make these scrumptious chicken breasts, you will need the following ingredients:
- 4 boneless, skinless chicken breasts
- 8 oz. mushrooms, finely chopped (I love using cremini or button mushrooms)
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and cut pockets into the chicken breasts.
- Melt 2 tablespoons of butter in a skillet and sauté mushrooms for 5 minutes. Add garlic, thyme, salt, and pepper; cook for another 2 minutes.
- Stuff the chicken pockets with the mushroom mixture and top with mozzarella cheese.
- Sear the stuffed chicken in the skillet with the remaining butter for 3-4 minutes on each side.
- Transfer to a baking dish and bake for 20-25 minutes until cooked through.
Notes
- Use a meat thermometer to ensure chicken reaches 165°F (74°C).
- Feel free to add additional herbs or spices to the mushroom mixture for extra flavor.
