To make these scrumptious chicken breasts, you will need the following ingredients:

  • 4 boneless, skinless chicken breasts
  • 8 oz. mushrooms, finely chopped (I love using cremini or button mushrooms)
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and cut pockets into the chicken breasts.
  2. Melt 2 tablespoons of butter in a skillet and sauté mushrooms for 5 minutes. Add garlic, thyme, salt, and pepper; cook for another 2 minutes.
  3. Stuff the chicken pockets with the mushroom mixture and top with mozzarella cheese.
  4. Sear the stuffed chicken in the skillet with the remaining butter for 3-4 minutes on each side.
  5. Transfer to a baking dish and bake for 20-25 minutes until cooked through.

  • Use a meat thermometer to ensure chicken reaches 165°F (74°C).
