Here’s what you’ll need for your Chicken and Sweet Potato Rice Bowl:
- 1 pound of boneless, skinless chicken breasts
- 2 medium sweet potatoes, peeled and diced
- 1 cup of uncooked brown rice
- 2 cups of chicken broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Rinse the brown rice, then combine it with chicken broth in a saucepan. Boil, cover, and simmer for about 30 minutes.
- Heat olive oil in a skillet, season the chicken, and cook for 6-7 minutes on each side until golden and cooked through. Let rest.
- Add diced sweet potatoes to the skillet and cook for 10-15 minutes until tender and caramelized.
- Slice the chicken and layer the rice, sweet potatoes, and chicken in a bowl. Garnish with parsley.
