- 8 oz of pasta (fettuccine or penne works best)
- 2 tablespoons olive oil
- 1 pound chicken breast, diced
- 8 oz mushrooms, sliced (button or cremini)
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Boil salted water and cook pasta according to package instructions. Drain and set aside.
- In a skillet, heat olive oil and sauté diced chicken until golden brown. Remove and set aside.
- Sauté sliced mushrooms until tender, add minced garlic, and cook for another minute.
- Pour in chicken broth and heavy cream, simmer for 5 minutes, then stir in Parmesan until melted.
- Add cooked chicken and pasta to the skillet, toss to coat in the sauce, and heat through.
- Garnish with fresh parsley and serve immediately.

- For added flavor, consider using different types of mushrooms.
