Instructions
- Preheat the oven to 350°F (175°C).
- Whisk the flour, baking soda, and salt in a medium bowl.
- Beat the butter and granulated sugar in a large bowl until light and fluffy.
- Add the egg, lemon zest, lemon juice, and vanilla extract; mix until combined.
- Gradually add dry ingredients to the wet mixture and stir until just combined.
- Cover the dough with plastic wrap and chill in the refrigerator for about 30 minutes.
- Scoop tablespoon-sized balls of dough onto a parchment-lined baking sheet and bake for 10-12 minutes.
- Dust with powdered sugar after cooling slightly.
