This cheesy shrimp casserole combines shrimp, rice, and veggies for a delightful baked dish.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup cream of mushroom soup
  • 1/2 cup milk
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt butter in a pan and cook shrimp with garlic powder, salt, and pepper until pink (3-4 minutes), then remove from heat.
  3. In a large bowl, mix cooked rice, shrimp mixture, cream of mushroom soup, milk, and frozen vegetables.
  4. Fold in half of the cheddar cheese.
  5. Pour the mixture into a greased 9×13-inch baking dish.
  6. Top with the remaining cheddar cheese.
  7. Bake for about 30 minutes until the cheese is bubbly and golden brown.
