A comforting Cheesy Ham and Potato Casserole that’s easy to make and perfect for any gathering.

Ingredients

  • 4 cups of diced potatoes
  • 2 cups of diced cooked ham
  • 1 cup of shredded cheddar cheese
  • 1 cup of sour cream
  • 1 can of cream of mushroom soup
  • 1/2 cup of chopped onion
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • 1/2 cup of breadcrumbs (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and dice the potatoes into small cubes.
  3. In a large bowl, mix potatoes, ham, onion, garlic powder, salt, pepper, sour cream, and cream of mushroom soup.
  4. Fold in 3/4 cup of shredded cheddar cheese, saving the rest for topping.
  5. Pour the mixture into a greased baking dish.
  6. Top with remaining cheese and breadcrumbs if desired.
  7. Cover with aluminum foil and bake for 30 minutes, then remove foil and bake for an additional 15 minutes.
  8. Let cool for a few minutes before serving.
