Ingredients

- 4 cups of diced potatoes
- 2 cups of diced cooked ham
- 1 cup of shredded cheddar cheese
- 1 cup of sour cream
- 1 can of cream of mushroom soup
- 1/2 cup of chopped onion
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 1/2 cup of breadcrumbs (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Peel and dice the potatoes into small cubes.
- In a large bowl, mix potatoes, ham, onion, garlic powder, salt, pepper, sour cream, and cream of mushroom soup.
- Fold in 3/4 cup of shredded cheddar cheese, saving the rest for topping.
- Pour the mixture into a greased baking dish.
- Top with remaining cheese and breadcrumbs if desired.
- Cover with aluminum foil and bake for 30 minutes, then remove foil and bake for an additional 15 minutes.
- Let cool for a few minutes before serving.
