  • 1 can diced tomatoes (14 oz)
  • 2 tbsp taco seasoning (store-bought or homemade)
  • 1/4 cup water or chicken broth
  • 1 1/2 cups shredded Mexican blend cheese

  • Sour cream

Instructions

  • Cook the Ground Turkey:
    Heat a large skillet over medium-high heat. Add the ground turkey and cook until browned, breaking it up with a spatula (about 5–7 minutes). Drain any excess liquid.
  • Sauté the Vegetables:
    Add the diced onion, garlic, and bell pepper to the skillet. Sauté for 3–4 minutes until the vegetables soften.
  • Add Beans, Corn, and Tomatoes:
    Stir in the black beans, corn, and diced tomatoes. Pour in the water or chicken broth, then add the taco seasoning. Stir well and bring the mixture to a gentle simmer.
  • Simmer and Melt the Cheese:
    Let the mixture simmer for about 5 minutes to allow the flavors to meld. Sprinkle the shredded cheese evenly over the top of the skillet. Cover and let cook for 2–3 minutes until the cheese is melted and bubbly.
  • Serve:
    Remove the skillet from heat and garnish with fresh cilantro if desired. Serve hot with tortilla chips, rice, or soft tortillas. Add your favorite toppings like sour cream and avocado slices.
