- For the chicken:
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- Salt and pepper, to taste
- For the filling:
- 1 cup shredded mozzarella cheese
- ½ cup cheddar cheese, shredded
- 3 cloves garlic, minced
- ¼ cup cream cheese, softened
- ¼ cup sour cream
- 4 large flour tortillas
- 1 cup fresh spinach leaves
- For cooking the wraps:
- 2 tbsp butter
- 1 tbsp olive oil
Instructions
- Prepare the chicken:
- Season both sides of the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
- Heat the olive oil in a skillet over medium heat. Cook the chicken for 5-6 minutes per side or until fully cooked (internal temperature reaches 165°F/74°C).
- Let the chicken rest for 5 minutes, then shred it into small pieces.
- Prepare the filling:
- In a medium bowl, combine the shredded mozzarella, cheddar cheese, minced garlic, cream cheese, and sour cream. Mix until smooth.
- Add the shredded chicken to the cheese mixture and stir until evenly combined.
- Assemble the wraps:
- Lay each tortilla flat on a clean surface. Spread a layer of fresh spinach leaves over each tortilla.
- Spoon the cheesy chicken mixture evenly onto the center of each tortilla, then roll the tortillas tightly into wraps.
- Cook the wraps:
- Heat butter and olive oil in a skillet over medium heat.
- Place the wraps seam-side down in the skillet and cook for 2-3 minutes on each side, until the tortillas are golden brown and crispy, and the cheese inside is melted.
- Remove from heat and let cool slightly before slicing.
- Serve:
- Serve the wraps warm, optionally with a side of marinara sauce or ranch dressing for dipping.
Notes
- You can add a bit of heat by mixing in diced jalapeños or hot sauce to the filling.
- Swap out spinach for arugula or kale for a different twist.
- These wraps can also be baked in the oven at 400°F (200°C) for 10-12 minutes if preferred.
