Ingredients
Scale
To create this cheesy delight, gather the following ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups bell peppers (mixed colors for a vibrant presentation)
- 1 cup shredded mozzarella cheese
- 1 cup cream of chicken soup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for drizzling
These ingredients are easily accessible and can be found at your local grocery store. I love using fresh bell peppers, but frozen ones work just as well, especially for quick weeknight meals!
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Sauté the bell peppers in a skillet with olive oil until tender, about 5 minutes.
- In a baking dish, layer the seasoned chicken, sautéed peppers, cream of chicken soup, and sprinkle mozzarella cheese on top.
- Cover with foil and bake for 25 minutes, then remove foil and bake for another 10 minutes until chicken is cooked and cheese is bubbly.
- Let rest for a few minutes before serving warm.
Notes
- Frozen bell peppers can be used for convenience.
- Feel free to add other veggies or spices according to your taste.
