To whip up this delicious Carrot Potato Soup, gather the following ingredients:
- 4 medium carrots, peeled and chopped
- 2 large potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves of garlic, minced
- 4 cups vegetable or chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup heavy cream (optional for creaminess)

Instructions
- Heat olive oil in a large pot and sauté onions and garlic until translucent (3-4 minutes).
