- 1 1/2 cups graham cracker crumbs (about 10–12 crackers)
- 1/3 cup granulated sugar
- 6 tablespoons unsalted butter (melted)
- 16 ounces cream cheese (room temperature)
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup sour cream (or Greek yogurt)
- 2 medium apples (peeled, cored and diced)
- 1 tablespoon lemon juice
- 1 tablespoon brown sugar
- 1/2 teaspoon ground cinnamon
- 3/4 cup caramel sauce (store-bought or homemade)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch pan with parchment paper.
- Mix graham crumbs, 1/3 cup sugar, and melted butter. Press into pan and bake 8 minutes; cool.
- Beat cream cheese and 1/2 cup sugar until smooth. Add egg, vanilla, and sour cream; mix well.
- Spread cheesecake batter over cooled crust and smooth the top.
- Toss diced apples with lemon juice, brown sugar, and cinnamon. Scatter over cheesecake layer.
- Drizzle half the caramel over apples. Bake 22-25 minutes until set but slightly jiggly.
- Cool completely, then chill at least 3 hours. Drizzle remaining caramel before serving.
