- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) white beans, drained and rinsed
- 1 cup chicken broth
- 1 cup corn (frozen or canned)
- 2 teaspoons Cajun seasoning
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup heavy cream (or a lighter alternative)
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pot and sauté chicken until browned. Remove and set aside.
- Add onion to the pot and sauté until translucent, then add garlic and cook for another minute.
- Return chicken to the pot and stir in tomatoes, beans, broth, corn, Cajun seasoning, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in heavy cream and cook for an additional 5 minutes.
- Serve hot, garnished with cilantro.

- For a lighter version, substitute heavy cream with a lighter alternative.
- Serve with crusty bread or tortilla chips for added texture.
