🟤 Mushrooms & Filling

  • 12 large portobello mushrooms

  • 1 lb shrimp, peeled and deveined

  • 1 cup cream cheese, softened

  • 1/2 cup shredded cheddar cheese

  • 1/2 cup breadcrumbs

🔥 Seasoning & Oil

  • 2 tablespoons Cajun seasoning

  • 2 tablespoons vegetable oil or butter

  • Salt and pepper, to taste

🌿 Garnish

  • Fresh parsley, chopped (for garnish)


Instructions

Prepare the Mushrooms
Clean the mushroom caps with a damp cloth and gently remove the stems. Hollow out a bit of the center to create space for the filling.

Cook the Shrimp
Chop shrimp into small pieces. In a skillet, heat 1 tablespoon oil or butter over medium heat. Add shrimp, 1 tablespoon Cajun seasoning, salt, and pepper. Cook for 2–3 minutes until shrimp are pink. Remove from heat.

Make the Filling
In a bowl, mix the cooked shrimp with cream cheese, cheddar cheese, breadcrumbs, and the remaining Cajun seasoning. Blend until fully combined.

Stuff the Mushrooms
Spoon the filling into each mushroom cap, pressing gently to pack it in.

Bake the Mushrooms
Preheat oven to 375°F (190°C). Arrange stuffed mushrooms on a baking tray lined with parchment paper. Drizzle remaining oil or dot with butter. Bake for 20 minutes or until golden and bubbly.

Garnish and Serve
Remove from oven, top with fresh parsley, and serve hot for maximum cheese pull.

Notes

Use baby bella mushrooms for bite-sized portions.

Don’t overcook shrimp in the skillet—they’ll finish in the oven.

Add a dash of lemon juice to the filling for brightness.

For extra spice, add chopped jalapeño or cayenne.
