Ingredients

- 8 ounces of fettuccine or penne pasta
- 2 boneless, skinless chicken breasts
- 2 tablespoons of cajun seasoning
- 2 tablespoons of olive oil
- 1 bell pepper (red, green, or yellow), sliced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 cup of heavy cream
- 1 cup of grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Boil salted water, add pasta, cook until al dente, then drain.
- Pat chicken dry and coat with cajun seasoning.
- Heat olive oil in a skillet, cook chicken until golden brown and internal temperature is 165°F, then remove.
- Sauté onion and bell pepper in the same skillet for 3-4 minutes, add garlic and cook for another minute.
- Pour in heavy cream, simmer, and stir in Parmesan until smooth. Season with salt and pepper.
- Slice chicken, add pasta and chicken to the sauce, and toss to combine.
- Serve hot, garnished with fresh parsley and extra Parmesan if desired.

- Feel free to customize by adding more vegetables or substituting chicken for shrimp.
