Indulge in a creamy and spicy Cajun chicken pasta that’s easy to make and full of flavor.

Ingredients

  • 8 ounces of fettuccine or penne pasta
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons of cajun seasoning
  • 2 tablespoons of olive oil
  • 1 bell pepper (red, green, or yellow), sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 cup of heavy cream
  • 1 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil salted water, add pasta, cook until al dente, then drain.
  2. Pat chicken dry and coat with cajun seasoning.
  3. Heat olive oil in a skillet, cook chicken until golden brown and internal temperature is 165°F, then remove.
  4. Sauté onion and bell pepper in the same skillet for 3-4 minutes, add garlic and cook for another minute.
  5. Pour in heavy cream, simmer, and stir in Parmesan until smooth. Season with salt and pepper.
  6. Slice chicken, add pasta and chicken to the sauce, and toss to combine.
  7. Serve hot, garnished with fresh parsley and extra Parmesan if desired.

Notes

  • Feel free to customize by adding more vegetables or substituting chicken for shrimp.
