Before we get started, let’s gather all the ingredients you’ll need. Here’s what you will require for these delicious Butterscotch Toffee Cookie Bars:
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butterscotch chips
- 1 cup toffee bits
Feel free to substitute the butterscotch chips with chocolate chips if you prefer a different flavor. The flexibility of this recipe is one of the things I love most about it!
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 9×13 inch baking dish with parchment paper or grease it.
- Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla extract.
- Whisk together the flour, baking soda, and salt; gradually add to the wet ingredients.
- Fold in butterscotch chips and toffee bits.
- Spread the batter in the baking dish and bake for 25-30 minutes.
- Cool for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.
