Instructions

- Combine graham cracker crumbs and melted butter; press into the bottom of a 9-inch springform pan.

- Add eggs one at a time, mixing on low speed after each addition.
- Melt butterscotch chips and fold into the cheesecake mixture with cinnamon.
- Pour half of the cheesecake filling into the crust, swirl in remaining filling with a knife.
- Bake for about 50 minutes until edges are set but center jiggles slightly.
- Cool in the oven for an hour, then on a wire rack for another hour; refrigerate for at least 2 hours before serving.
