  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 cup frosting (your choice of flavor)
  • Sprinkles (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and cream together butter, brown sugar, and granulated sugar. Beat in egg and vanilla, then mix in flour, salt, baking powder, and cinnamon until dough forms.
  2. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
  3. Flour your work surface, roll out the dough to 1/4 inch thick, and cut out rectangles.
  4. Place half of the rectangles on a baking sheet, add about a teaspoon of frosting to each, cover with remaining rectangles, and seal edges with a fork.
  5. Bake for 12-15 minutes until edges are lightly golden, then cool on a wire rack.
