- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1 cup frosting (your choice of flavor)
- Sprinkles (optional)

- Preheat oven to 350°F (175°C) and cream together butter, brown sugar, and granulated sugar. Beat in egg and vanilla, then mix in flour, salt, baking powder, and cinnamon until dough forms.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
- Flour your work surface, roll out the dough to 1/4 inch thick, and cut out rectangles.
- Place half of the rectangles on a baking sheet, add about a teaspoon of frosting to each, cover with remaining rectangles, and seal edges with a fork.
- Bake for 12-15 minutes until edges are lightly golden, then cool on a wire rack.
Notes
- Chilling the dough is essential for the cookies to hold their shape.
- Feel free to use your favorite flavor of frosting for the filling.
