- 4 chicken thighs (bone-in, skin-on for extra flavor)
- 2 cups baby carrots
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- Salt and pepper to taste

Instructions
- Preheat the oven to 400°F (200°C) and season the chicken thighs with salt and pepper.

- Place chicken thighs skin-side down in the skillet, cook for 5 minutes, then flip and add baby carrots.
