- 4 lbs beef short ribs
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 2 cups red wine (choose a good quality)
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary

Instructions
- Preheat the oven to 325°F (160°C) and season short ribs with salt and pepper.
- In a Dutch oven, brown the ribs in olive oil on all sides, then set aside.
- Sauté onion, carrots, and celery for 5 minutes, then add garlic for 1 more minute.
- Deglaze the pot with red wine, scraping the bottom to release browned bits.
- Return the ribs to the pot, add beef broth, tomato paste, thyme, and rosemary, and bring to a simmer.
- Cover and transfer to the oven; braise for 2.5 to 3 hours until tender.
- Let rest, then serve with sauce and garnish with parsley if desired.
