Ingredients

  • 1 pound of boneless chicken thighs, diced
  • 8 ounces of fresh mushrooms, sliced
  • 2 tablespoons of black peppercorns, crushed
  • 3 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, grated
  • 1/4 cup of soy sauce
  • 2 tablespoons of vegetable oil
  • 1 tablespoon of cornstarch
  • 1 cup of chicken broth
  • 2 green onions, chopped (for garnish)

Instructions

  1. Marinate chicken in soy sauce, black pepper, garlic, and ginger for at least 10 minutes.
  2. Mix cornstarch with chicken broth in a bowl and set aside.
  3. Heat oil in a skillet and cook marinated chicken for 5-7 minutes until browned.
  4. Add sliced mushrooms and cook for an additional 5 minutes until tender.
  5. Pour in the chicken broth mixture, stir, and simmer for 3-5 minutes until sauce thickens.
  6. Serve hot, garnished with chopped green onions.

Notes

  • For a spicier kick, add red pepper flakes to the marinade.
  • Serve with steamed rice for a complete meal.
