Ingredients

  • 4 ripe peaches, diced
  • 1 cup of whipped ricotta
  • 1 baguette or crusty bread, sliced
  • 2 tablespoons of honey
  • Fresh basil leaves, for garnish
  • Salt and pepper to taste
  • 1 tablespoon of balsamic glaze (optional)

Instructions

  1. Wash and dice the peaches into small cubes.
  2. Whip the ricotta cheese until creamy, adding salt and pepper to taste.
  3. Preheat the oven to 400°F (200°C) and toast the bread slices for about 5 minutes until golden brown.
  4. Spread whipped ricotta on each toasted slice and top with diced peaches.
  5. Drizzle honey over the bruschetta.
  6. Garnish with fresh basil leaves and balsamic glaze if desired, then serve immediately.
