Here’s what you’ll need for your savory Beef Taco Pasta:
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 8 ounces pasta (your choice: penne, rotini, or elbow)
- 1 can diced tomatoes (14.5 ounces)
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 2 cups beef broth
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Brown the beef in a skillet over medium heat; drain excess fat.
- Sauté onion and garlic until translucent.
- Add taco seasoning and mix well.
- Cook pasta according to package instructions; drain.
- Add tomatoes, black beans, corn, and beef broth to the skillet; simmer for 5 minutes.
- Stir in cooked pasta and half of the cheese until combined.
- Top with remaining cheese and garnish with cilantro before serving.
Notes
- Feel free to use any type of pasta you prefer.
- Adjust spice levels by adding more or less taco seasoning.
