Here’s what you’ll need for your savory Beef Taco Pasta:

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 8 ounces pasta (your choice: penne, rotini, or elbow)
  • 1 can diced tomatoes (14.5 ounces)
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 2 cups beef broth
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Brown the beef in a skillet over medium heat; drain excess fat.
  2. Sauté onion and garlic until translucent.
  3. Add taco seasoning and mix well.
  4. Cook pasta according to package instructions; drain.
  5. Add tomatoes, black beans, corn, and beef broth to the skillet; simmer for 5 minutes.
  6. Stir in cooked pasta and half of the cheese until combined.
  7. Top with remaining cheese and garnish with cilantro before serving.
