- 1 package (9 ounces) cheese tortellini
- 1 can (10 ounces) enchilada sauce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Cook cheese tortellini according to package instructions, drain, and set aside.
- In a skillet, heat olive oil, sauté onion and garlic until translucent, then add ground beef and cook until browned.
- Season beef with chili powder, salt, and pepper; cook for 2 more minutes.
- Add enchilada sauce to the beef mixture, stir, and simmer for 5 minutes.
- Fold in cooked tortellini, sprinkle with cheese, cover, and cook for an additional 5 minutes until cheese is melted.
