Ingredients

  • 1 lb frozen fries (or 3 large russet potatoes cut into fries)
  • 2 cups cooked chicken (shredded, rotisserie works)
  • 1 cup BBQ sauce (your favorite brand)
  • 6 slices bacon (cooked and chopped)
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup green onions (sliced)
  • 0.25 cup cilantro (optional)
  • to taste salt and pepper

Instructions

  • Preheat oven to 425°F (220°C). Spread frozen fries on a sheet in a single layer and bake 20-25 minutes, flipping halfway.
  • Toss shredded chicken with 3/4 cup BBQ sauce in a bowl. Adjust seasoning and set aside.
  • Lower oven to 400°F (200°C). Arrange baked fries on an oven-safe platter and top with BBQ chicken.
  • Sprinkle chopped bacon and shredded cheddar evenly. Return to oven for 5-7 minutes until cheese melts and bubbles.
  • Garnish with green onions and cilantro. Serve immediately with extra BBQ sauce on the side.
