- 1 lb frozen fries (or 3 large russet potatoes cut into fries)
- 2 cups cooked chicken (shredded, rotisserie works)
- 1 cup BBQ sauce (your favorite brand)
- 6 slices bacon (cooked and chopped)
- 1.5 cups shredded cheddar cheese
- 0.5 cup green onions (sliced)
- 0.25 cup cilantro (optional)
- to taste salt and pepper
Instructions
- Preheat oven to 425°F (220°C). Spread frozen fries on a sheet in a single layer and bake 20-25 minutes, flipping halfway.
- Toss shredded chicken with 3/4 cup BBQ sauce in a bowl. Adjust seasoning and set aside.
- Lower oven to 400°F (200°C). Arrange baked fries on an oven-safe platter and top with BBQ chicken.
- Sprinkle chopped bacon and shredded cheddar evenly. Return to oven for 5-7 minutes until cheese melts and bubbles.
- Garnish with green onions and cilantro. Serve immediately with extra BBQ sauce on the side.
