To make this BBQ Chicken and Cornbread Casserole, you will need the following ingredients:

  • 2 cups shredded cooked chicken
  • 1 cup BBQ sauce (your favorite brand)
  • 1 cup corn (canned or frozen)
  • 1 cup shredded cheddar cheese
  • 1 package (8.5 oz) cornbread mix
  • 1/3 cup milk
  • 1 egg
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix shredded chicken and BBQ sauce in a bowl until well-coated.
  3. Add corn and half of the cheddar cheese to the chicken mixture.
  4. Prepare the cornbread mix as per package instructions, adding milk and egg.
  5. Layer BBQ chicken mixture in a greased baking dish, then pour cornbread batter on top.
  6. Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
  7. Five minutes before done, sprinkle remaining cheddar cheese on top and let it melt.
