To make this BBQ Chicken and Cornbread Casserole, you will need the following ingredients:
- 2 cups shredded cooked chicken
- 1 cup BBQ sauce (your favorite brand)
- 1 cup corn (canned or frozen)
- 1 cup shredded cheddar cheese
- 1 package (8.5 oz) cornbread mix
- 1/3 cup milk
- 1 egg
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Mix shredded chicken and BBQ sauce in a bowl until well-coated.
- Add corn and half of the cheddar cheese to the chicken mixture.
- Prepare the cornbread mix as per package instructions, adding milk and egg.
- Layer BBQ chicken mixture in a greased baking dish, then pour cornbread batter on top.
- Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
- Five minutes before done, sprinkle remaining cheddar cheese on top and let it melt.
Notes
- For a spicier kick, add jalapeños to the chicken mixture.
- Leftovers can be stored in the fridge for up to 3 days.
