To make your own Banana Oatmeal Bars, gather these simple ingredients:

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup almond butter (or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 cup dark chocolate chips (optional)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Add almond butter, honey (or maple syrup), vanilla extract, baking powder, cinnamon, and salt to the mashed bananas and stir to combine.
  4. Fold in the rolled oats and dark chocolate chips if using.
  5. Pour the mixture into the prepared baking dish and spread it evenly. Bake for 25 minutes or until golden brown.
