  • 3 ripe bananas
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 1 tablespoon cinnamon
  • 1/2 cup chopped nuts (optional)
  • 1/4 cup milk (for brushing)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mash the bananas and mix with granulated sugar, brown sugar, and butter until creamy.
  3. Add eggs and vanilla extract, stirring until combined.
  4. In a separate bowl, whisk together baking soda, salt, and flour, then combine with the wet ingredients.
  5. Mix cinnamon with a bit of sugar for the filling and add nuts if desired.
  6. Roll out the dough to a rectangle, spread butter, and sprinkle with the cinnamon sugar mixture.
  7. Roll the dough into a log and slice into 1-inch rolls.
  8. Place in a greased baking dish and bake for 25-30 minutes until golden brown.
  9. Cool for 15 minutes before serving.
