Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs (preferably whole wheat)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • Cooking spray or olive oil for drizzling

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and slice zucchinis into 1/4 inch thick rounds.
  3. Mix breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper in a bowl.
  4. Beat the egg in another bowl and coat each zucchini slice.
  5. Dip egg-coated zucchini into the breadcrumb mixture.
  6. Place coated zucchini on a lined baking sheet without touching.
  7. Spray or drizzle olive oil on top and bake for 20-25 minutes until golden brown.
  8. Let cool for a few minutes before serving.
