- 4 medium-sized potatoes (Yukon Gold or Russet work best)
- 200 grams of feta cheese
- 4 tablespoons of olive oil
- 1 teaspoon of dried oregano
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes, then poke holes in them with a fork.
- Drizzle olive oil over the potatoes and sprinkle with salt, pepper, garlic powder, and oregano.
- Crumble feta cheese over the potatoes; add cherry tomatoes and black olives if desired.
- Place the potatoes on a baking sheet and bake for 45 minutes or until tender.
- Let cool for a few minutes, then garnish with fresh parsley before serving.
