- 8 ounces of pasta (penne or rigatoni work great)
- 8 ounces feta cheese
- 2 cups cherry tomatoes
- 1/4 cup extra virgin olive oil
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional, for a kick)
- Fresh basil, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cook pasta in salted water until al dente, reserving 1 cup of pasta water before draining.
- In a baking dish, combine cherry tomatoes, feta, olive oil, garlic, salt, pepper, and red pepper flakes.
- Bake for 25-30 minutes until tomatoes burst and feta softens.
- Remove from oven, mash feta, and mix with pasta, adding reserved pasta water as needed.
- Garnish with fresh basil and serve warm.
Notes
- Feel free to adjust the level of spiciness by adding more or less red pepper flakes.
- For a vegetarian option, ensure the pasta is egg-free.
