Ingredients

  • 8 ounces feta cheese
  • 2 cups cherry tomatoes
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional, for a kick)
  • Fresh basil, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook pasta in salted water until al dente, reserving 1 cup of pasta water before draining.
  3. In a baking dish, combine cherry tomatoes, feta, olive oil, garlic, salt, pepper, and red pepper flakes.
  4. Bake for 25-30 minutes until tomatoes burst and feta softens.
  5. Remove from oven, mash feta, and mix with pasta, adding reserved pasta water as needed.
  6. Garnish with fresh basil and serve warm.

Notes

  • Feel free to adjust the level of spiciness by adding more or less red pepper flakes.
