Instructions
- Preheat the oven to 350°F (175°C).
- Grease a muffin tin or use muffin liners.
- In a bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together egg, milk, vegetable oil, and vanilla extract.
- Combine the wet and dry ingredients, stirring gently until just mixed.
- Fill each muffin cup about two-thirds full.
- Bake for 15-18 minutes or until a toothpick comes out clean.
- Mix sugar and cinnamon for coating while muffins bake.
- Brush muffins with melted butter and roll in the cinnamon-sugar mixture after cooling for 5 minutes.
