Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a muffin tin or use muffin liners.
  3. In a bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  4. In another bowl, whisk together egg, milk, vegetable oil, and vanilla extract.
  5. Combine the wet and dry ingredients, stirring gently until just mixed.
  6. Fill each muffin cup about two-thirds full.
  7. Bake for 15-18 minutes or until a toothpick comes out clean.
  8. Mix sugar and cinnamon for coating while muffins bake.
  9. Brush muffins with melted butter and roll in the cinnamon-sugar mixture after cooling for 5 minutes.
