To whip up these yummy Bacon-Wrapped Jalapeño Chicken Bites, you’ll need the following ingredients:
- 1 pound boneless, skinless chicken breasts
- 6 large jalapeños
- 8 ounces cream cheese, softened
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 12 slices of bacon, cut in half
- Salt and pepper to taste
- Optional: fresh cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C). Cut chicken into bite-sized pieces and season with salt, pepper, garlic powder, onion powder, and smoked paprika.
- Slice jalapeños in half lengthwise and remove seeds/membranes.
- Mix cream cheese with a pinch of salt and fill each jalapeño half.
- Wrap each filled jalapeño with a half slice of bacon and secure with a toothpick if needed.
- Place on a baking sheet and bake for 25-30 minutes until bacon is crispy and chicken is cooked through.
- Let cool for a few minutes before serving and garnish with cilantro if desired.
Notes
- Adjust jalapeño heat by leaving seeds in or removing them.
- Use toothpicks to keep bacon in place while baking.
