- 2 pounds of potatoes, peeled and diced
- 1 cup of sour cream
- 1 cup of shredded cheddar cheese
- 1/2 cup of ranch dressing
- 1 cup of crispy bacon, crumbled
- 1/2 cup of green onions, chopped
- Salt and pepper to taste
- 1/2 cup of breadcrumbs (optional for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- Boil the diced potatoes until tender, about 10-15 minutes, then drain.
- Mix the cooked potatoes with sour cream, ranch dressing, half of the cheddar cheese, bacon, and green onions; season with salt and pepper.
- Transfer to a greased 9×13-inch baking dish, top with remaining cheddar cheese and breadcrumbs if using.
- Bake for 30-35 minutes until cheese is bubbly and golden.
- Let cool briefly, then serve warm.
