Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 2 medium onions, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons sweet paprika
  • 1 teaspoon caraway seeds
  • 1 bell pepper, chopped
  • 2 medium tomatoes, diced
  • 4 cups beef broth
  • 3 medium potatoes, diced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat oil in a large pot, sear beef cubes until browned.
  2. Remove beef, sauté onions until translucent, then add garlic.
  3. Stir in paprika and caraway seeds, then add bell pepper and tomatoes.
  4. Return beef to the pot, add broth, boil, then simmer for 1.5 hours.
  5. Add potatoes, season, cover, and simmer for another 30 minutes until tender.
