- 2 large cucumbers, thinly sliced
- 1/2 red onion, thinly sliced
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sugar
- 1 teaspoon grated ginger
- 1 tablespoon sesame seeds
- Fresh cilantro, for garnish (optional)
Instructions
- Wash and thinly slice the cucumbers.
- Slice the red onion and soak in cold water if desired.
- Whisk together rice vinegar, soy sauce, sesame oil, sugar, and ginger to make the dressing.
- Combine cucumbers and onions in a bowl, pour the dressing over, and toss to coat.
- Marinate in the fridge for 20-30 minutes.
- Serve with sesame seeds and garnish with cilantro.

- Soaking onions can reduce their sharpness.
