  • 1 cup pumpkin puree
  • 1 cup diced apples (preferably Granny Smith)
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup chopped nuts (optional)

For the streusel topping:

  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ cup cold butter, cubed

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line or grease a muffin tin.
  3. Whisk together dry ingredients in a large bowl.
  4. In another bowl, combine wet ingredients until smooth.
  5. Gently fold wet and dry ingredients together until just combined.
  6. Mix streusel topping ingredients until crumbly.
  7. Fill muffin cups two-thirds full and sprinkle with streusel.
  8. Bake for 20-25 minutes until a toothpick comes out clean.
  9. Cool in the tin for 10 minutes before transferring to a rack.
