- ½ cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- ½ cup chopped nuts (optional)
For the streusel topping:
- ½ cup all-purpose flour
- ½ cup brown sugar
- 1 teaspoon ground cinnamon
- ¼ cup cold butter, cubed
Instructions
- Preheat oven to 350°F (175°C).
- Line or grease a muffin tin.
- Whisk together dry ingredients in a large bowl.
- In another bowl, combine wet ingredients until smooth.
- Gently fold wet and dry ingredients together until just combined.
- Mix streusel topping ingredients until crumbly.
- Fill muffin cups two-thirds full and sprinkle with streusel.
- Bake for 20-25 minutes until a toothpick comes out clean.
- Cool in the tin for 10 minutes before transferring to a rack.
