  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apples (about 2 medium apples)
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Whisk together flour, baking powder, baking soda, cinnamon, and salt in a medium bowl.
  3. Cream softened butter, granulated sugar, and brown sugar in a large bowl until light and fluffy.
  4. Add eggs one at a time, mixing well, then stir in vanilla extract.
  5. Gradually combine dry ingredients with wet ingredients, mixing until just combined.
  6. Fold in diced apples and chopped pecans gently.
