Let’s gather our ingredients! This cake is easy to make and uses some of my favorite pantry staples. Here’s what you’ll need:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups peeled and diced apples (about 2 medium apples)
- 1 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Whisk together flour, baking powder, baking soda, cinnamon, and salt in a medium bowl.
- Cream softened butter, granulated sugar, and brown sugar in a large bowl until light and fluffy.
- Add eggs one at a time, mixing well, then stir in vanilla extract.
- Gradually combine dry ingredients with wet ingredients, mixing until just combined.
- Fold in diced apples and chopped pecans gently.
- Pour batter into the prepared cake pan and bake for 45 minutes, or until a toothpick comes out clean.
- Prepare caramel glaze by melting butter, brown sugar, and milk in a saucepan; boil, then simmer for 3 minutes and stir in vanilla.
- Let the cake cool, then drizzle warm caramel glaze over the top.

- Ensure not to overmix the batter to keep the cake light and fluffy.
